FINEBLACKTRUFFLE
It is the black truffle par excellence, its scientific name is "Tuber Melanosporum vitt", but it is known by everyone as the Norcia Black Truffle or the Périgord Truffle. Among the black truffles it is the most prized and it is distinguished from them by its delicate and pleasant scent and by a very particular, almost sweetish flavor. Its shape is mainly regular, externally it has a black and wrinkled peridium (rind) and its purplish black pulp with light veins.
The harvest period is from 1st December to 15th March.
It is preferable to consume it raw by grating it directly on dishes to enjoy its peculiarities, but it has a very good yield even in cooking, especially in creaming. Perfect match if used in slices on roasted meats or to flavor polenta, eggs or hot soups.
